Μια πολύ ωραία κυνηγετική συνταγή για σήμερα: Ορτύκια στη σούβλα σε ψησταριά κάρβουνου

Τα ορτύκια είναι ένας αγαπημένος μεζές των κυνηγών. Τα σουβλίσαμε στις μικρές σούβλες και τα ψήσαμε σε σιγανή φωτιά πάνω από τα κάρβουνα. Μια δυο επαλείψεις με τη μαρινάδα τους και έτοιμα τα σουβλιστά ορτύκια. Πάμε να δούμε βήμα-βήμα τη συνταγή και το ψήσιμο.

16 ορτύκια

Ξύσμα από λεμόνι

Αλάτι

Λεμονοπίπερο

80ml κρασί λευκό

80ml σκορδέλαιο

Θυμάρι

Ρίγανη

Πιπέρι

ΠΡΟΕΤΟΙΜΑΣΙΑ

Πλύντε καλά τα ορτύκια, καθαρίστε καλά εσωτερικά και αφήστε τα να στραγγίσουν. Πρώτη σας δουλειά, να περιχύσετε τα ορτύκια με το κρασί. Ανακατέψτε καλά και αφήστε για 20 λεπτά με μισή ώρα να σταθούν στο κρασί. Στη συνέχεια, ρίξτε εσωτερικά λίγο από το ξύσμα του λεμονιού και λεμονοπίπερο. Εξωτερικά, βάλτε αλάτι, πιπέρι και θυμάρι (αναλογία μείγματος: 1 κουτ. σουπ. αλάτι, 1 κουτ. γλ. πιπέρι, 1 κουτ. γλυκού θυμάρι) και περιχύστε με το σκορδέλαιο (αναλογία σκορδέλαιου: σε 100ml ελαιόλαδο, 2 σκελίδες σκόρδο σπασμένες).  Αφήστε να μαριναριστούν για 2-3 ώρες. Αφού περάσει η ώρα και πριν ανάψετε φωτιά στην ψησταριά, ασχοληθείτε με το σούβλισμα, το οποίο θέλει την τεχνική του για να δεθούν τα ορτύκια σωστά πάνω στο σουβλί.

ΨΗΣΙΜΟ

Όταν τελειώσετε με το σούβλισμα των ορτυκιών, ασχοληθείτε με το άναμμα της φωτιάς. Μέσα στη σκάφη ψησίματος της ψησταριάς σας τοποθετήστε τα κάρβουνα σε σωρό κατά μήκος. Στην κορυφή τοποθετήστε βαμβάκι εμποτισμένο με οινόπνευμα και ανάψτε φωτιά. Τα κάρβουνα ανάβουν ανάποδα, από πάνω προς τα κάτω, εύκολα, γρήγορα κα χωρίς καπνό. Όταν τα κάρβουνα ανάψουν καλά, απλώστε τα μέσα στη σκάφη ψησίματος της ψησταριάς σας και μειώστε λίγο τη θερμότητα που εκπέμπουν ρίχνοντας στάχτη πάνω από τα κάρβουνα. Ψήστε σε μέτρια θερμοκρασία μέχρι να πάρουν χρώμα.

Όταν πιάσει εσωτερική θερμοκρασία 75°C και έχετε καλό χρώμα ψημένου, τότε τα ορτύκια σας είναι έτοιμα. Κατά τη διάρκεια του ψησίματος, αλείψτε τα ορτύκια με το περίσσευμα από τη μαρινάδα. Βγάλτε τα ορτύκια και σκεπάστε για 6-7 λεπτά να κρυώσουν. Ξεσουβλίστε και κόψτε στα δύο ή και σε μικρότερα κομμάτια. Προσθέστε αλατορίγανη που θα έχετε ετοιμάσει από πριν. Συνοδεύεται με λευκό κρασί και σαλάτες εποχής, ψητές ή ωμές. Καλή παρέα απαραίτητη.
