Η Tσικνοπέμπτη είναι η Πέμπτη της δεύτερης εβδομάδας του Τριωδίου, περίοδος που οι άνθρωποι προετοιμάζονται για την μεγάλη νηστεία της Σαρακοστής. Η Τσικνοπέμπτη δίνει την ευκαιρία στα νοικοκυριά να καταναλώσουν με εορταστικό και χαρούμενο τρόπο ότι κρέας τους έχει απομείνει πριν από τη νηστεία της Σαρακοστής.
Η λέξη “τσικνοπέμπτη” προέρχεται από την λέξη “τσίκνα” (η μυρωδιά του ψημένου κρέατος) και από την λέξη “Πέμπτη”. Γιορτάζεται άλλωστε την Πέμπτη, 11 ημέρες πριν την Καθαρά Δευτέρα. Είναι μια μέρα προετοιμασίας για την μεγάλη νηστεία της Σαρακοστής πριν από το Πάσχα. Μια προετοιμασία που έγκειται στην προσπάθεια να βιώσουμε τις επερχόμενες ημέρες της Μεγάλης Τεσσαρακοστής.
Η Τσικνοπέμπτη βρίσκεται στη 2η εβδομάδα της περιόδου που εκκλησιαστικά ονομάζεται Τριώδιο, η οποία αποτελείται από τρεις εβδομάδες πριν εισέλθουμε στην Μεγάλη Τεσσαρακοστή. Δηλαδή, τη νηστεία πριν από το Πάσχα.
Ο λόγος που γίνεται ημέρα Πέμπτη, είναι πως η ορθόδοξη εκκλησία θεωρεί σημαντικές τις νηστείες της Τετάρτης και της Παρασκευής. Έτσι, και έγινε επιλογή της ενδιάμεσης ημέρας από την Τετάρτη και την Παρασκευή. Έχει καθιερωθεί να κυριαρχεί το κόκκινο χρώμα είτε το κρέας είναι αυτό, είτε το κρασί. Έτσι η Τσικνοπέμπτη θα μας θυμίζει το Πάσχα και την χαρά της Αναστάσεως.
Η προέλευση αυτού του εθίμου χάνεται στα βάθη του χρόνου. Ωστόσο, φαίνεται να συνδέεται με τις βακχικές γιορτές των αρχαίων Ελλήνων και Ρωμαίων. Θεωρούσαν το φαγοπότι και το γλέντι ιεροτελεστία για την καλή ευφορία της γης την άνοιξη. Επίσης, η Τσικνοπέμπτη αποτελεί, ουσιαστικά, την απαρχή των εκδηλώσεων για την Αποκριά, αφού την επόμενη εβδομάδα ακολουθούν το Καρναβάλι και η Καθαρά Δευτέρα.
Έθιμα της Τσικνοπέμπτης ανά την Ελλάδα
Πέρα από το καθιερωμένο ψήσιμο κρεάτων, κάθε περιοχή της Ελλάδας έχει τα δικά της ήθη και έθιμα για την Τσικνοπέμπτη.
Στην Κέρκυρα γίνονται τα λεγόμενα «Κορφιάτικα Πετεγολέτσια». Η λέξη Πετεγολέτσια σημαίνει κουτσομπολιό. Πραγματοποιείται το βράδυ της Τσικνοπέμπτης, στην Πιάτσα κοντά στην τοποθεσία «Κουκουνάρα» τής Κέρκυρας.
Στην Πάτρα, έχουμε το έθιμο της Γιαννούλας της Κουλουρούς. Η Γιαννούλα, σύμφωνα με την παράδοση, πιστεύει πως ο ναύαρχος Ουίλσον έρχεται να την παντρευτεί και τον περιμένει μάταια σαν την τρελή στο λιμάνι. Έτσι, την Τσικνοπέμπτη οι Πατρινοί ντύνουν κάποια νύφη, ή βάζουν ένα ομοίωμα νύφης στο λιμάνι και διασκεδάζουν γύρω του.
Στις Σέρρες ανάβουν μεγάλες φωτιές στις αλάνες και αφού ψήσουν το κρέας, πηδούν από πάνω τους.
Στην Κομοτηνή, οι νοικοκυρές σχεδόν καίνε μια κότα, για να τη φάει η οικογένεια την Κυριακή της Αποκριάς. Η παράδοση αναφέρει, επίσης, ότι την Τσικνοπέμπτη τα αρραβωνιασμένα ζευγάρια πρέπει να ανταλλάξουν φαγώσιμα δώρα. Ο άντρας πρέπει να στείλει τον «κούρκο», δηλαδή μία κότα, και η γυναίκα μπακλαβά και μια κότα γεμιστή.
Στη Θήβα, αρχίζει ο «βλάχικος γάμος», που ξεκινά με το προξενιό δύο νέων, συνεχίζει με τον γάμο και τελειώνει την Καθαρά Δευτέρα με την πορεία των προικιών της νύφης και το γλέντι των συμπεθέρων.
Στην Ιο, το βράδυ της Τσικνοπέμπτης μασκαράδες ζωσμένοι με κουδούνια προβάτων διασχίζουν τη Χώρα και επισκέπτονται σπίτια και καταστήματα.
Στον Πόρο, η παράδοση επιβάλλει στους νέους να κλέψουν ένα… μακαρόνι, το οποίο θα βάλουν κάτω από το μαξιλάρι τους για να δουν ποια θα παντρευτούν.
Σε όλη την Πελοπόννησο σφάζουν χοιρινά από τα οποία φτιάχνουν διάφορα άλλα τρόφιμα, μεταξύ των οποίων πηχτή, τσιγαρίδες, λουκάνικα, γουρναλοιφή και παστό.
Στη Σκόπελο, οι κάτοικοι δίνουν ραντεβού στο Πεύκο, για να συνεχίσουν το γλέντι και το φαγοπότι όλοι μαζί.
