ΚΟΚΚΙΝΙΣΤΟ

2 κιλά αγριογούρουνο σε μερίδες

Μαρινάδα:

2 φλυτζάνια κρασί κόκκινο ξηρό

1 φλυτζάνι ξύδι από κρασί

1 φλυτζάνι ελαιόλαδο

1 κρεμμύδι σε 4 κομμάτια

3 σκελίδες σκόρδο

3 δαφνόφυλλα

10 κόκκους μαυροπίπερο

5 κόκκους μπαχάρι

1 κιλό ζάχαρη

1 πορτοκαλόφλουδα

Σάλτσα:

1 φλυτζάνι λάδι

2 κρεμμύδια ψιλοκομμένα

1 φλυτζάνι κόκκινο κρασί ξηρό

Χυμό ενός πορτοκαλιού

2 φλυτζάνια ζεστό νερό

Αλάτι, πιπέρι

1 ντομάτα τριμμένη

1 κουταλιά σούπας ντοματοπελτέ

1 πιπεριά γλυκιά

1 δαφνόφυλλο

Εκτέλεση:

Σε ένα μεγάλο σκεύος γυάλινο ή μεταλλικό βάζουμε το κρέας με τα υλικά της μαρινάδας (να καλύπτεται το κρέας). Σκεπάζουμε με διάφανη μεμβράνη και το αφήνουμε στο ψυγείο για μία ημέρα. Σουρώνουμε το κρέας και το σκουπίζουμε καλά. Σοτάρουμε τα κρεμμύδια, προσθέτουμε το κρέας και σβήνουμε με το κρασί. Περιμένουμε λίγο και συμπληρώνουμε τα υπόλοιπα υλικά της σάλτσας και βράζουμε για περίπου 2 ώρες. Κατά διαστήματα ανακατεύουμε και συμπληρώνουμε ζεστό νερό, αν χρειαστεί. Σερβίρεται με ρύζι, πουρέ, ζυμαρικά, πατάτες φούρνου ή τηγανιτές.
